The Haugh Unit (HU) of poultry eggs is determined by the following equation:
HU= 100 log (H + 7.57 – 1.7 W in power of 0.37)
where
H is albumen height in mm
W is egg weight in g
The formula might also be applied to duck eggs, but grading duck eggs in that way - like grading hen eggs in the USA - should be done with caution.
I wonder however whether duck eggs are often directly sold for human consumption.
Setting up your Haugh Unit testing area takes some work. The solutions need to be checked periodically because they can be affected by temperature and evaporation. In our research, we have found it to be a less reliable indicator of shell quality than %shell. This is the weight of dried shell with membranes as a percentage of the original egg weight (from day of lay). Fred Silversides (Canada) has discussed the weakness of the Haugh Unit measurement in his publications.
