Longitudinal acceleration can be figured out by the vehicle speed and it's effect on the motor can also be determined easily. What about lateral acceleration during cornering and it's effect on the motor and torque acting on the motor? Can someone explain this in layman terms. Thank you.
Depends on your driveline configuration.
If you have in-wheel/hub motors, they will have forces to handle related to the turn, axial and bending.
If you have two wheels on a single shaft, the shaft will experience torque, which is why a differential is normally used.
In any other configuration, the motors are isolated from these forces and torque only depends on breaking or acceleration commanded.

I recommend reading various publications from M.Ellims and H.E.Monkhouse at Protean who worked on in-wheel motor vehicle and did some interesting research and assessment on their vehicle of the potential effect (yaw rate in particular) of in-wheel motors on vehicle stability. Hope this will put you in the right path to getting some levels of answers.
Besides the above mentioned effects especially on in-wheel motors, lateral vehicle acceleration may increase the (lateral) tire slip. Due to the force situation in the contact surface between tire and road, and due to the behavior of the tire (tire friction circle, Kamm Circle), additional resistances may occur, that require increased torque for propulsion. Besides the tire characteristics, important impact on the connection of lateral acceleration and longitudinal propulsion torque behavior is given by the vehicle layout (steering tendency) and the suspension characteristics.
