Maintenance is keeping the water quality within the desirable range of each indicator for the species of interest (ie it is about managing water quality/growing conditions). Monitoring should be used to inform maintenance and management decisions. Monitoring alone is not management.
Maintenance is regularly keeping it at desired levels and ranges while monitoring is regularly checking to know if the parameters are normal. For example, an aerator may be introduced or water replaced to correct problems with DO. That's maintenance. Monitoring will help unravel this situation. So monitoring helps in maintenance.

Monitoring is measuring and, hopefully, recording a number a parameters that will let you evaluate the quality of the water in your aquaculture operation. However, no action is taken further.
If you want to maintain the quality of the water in your aquaculture operation and, hopefully, in the environment in which it operates, you first will have to decide what values in your parameters are an indication of "good" quality. Then, you will have to take the appropriate actions to adjust/remediate so as to increase/decrease/stabilize some of these parameters to achieve the values you will have set to reach "good" quality in your water.
Total agree with what Professor Thierry Chopin just replied. Maintainance need you "to do something" to keep the environment in a proper situation which is good for the cultured orgnisms, while through monitoring you can get the information about "what you did to maintain" is right or not.
Monitoring should be done for proper maintenance. Measuring different water quality parameters over the time is the monitoring. May be it is an observation. Keeping the optimum levels of those parameters is called maintenance. On the other hand taking the necessary actions to keep the optimum water quality.

I agree with the answers but monitoring might not be enough. You need process control strategy to maintain continuously the needed quality of water. The controlled variable is the pH of water and you can manupilute the flow of the stream that could be used to adjust the pH of water.

Water quality monitoring and management are both inter connected activities. In the case of normal aquaculture system the water quality monitoring is done with normal titration or kit method or digital water quality analyzers and the management is done using the chemical or physical methods.
Aquaponics being an integrated system, utilizes the plants and medium in the hydroponic bed to remove unwanted waste materials from the water to maintain an optimum water quality for the fish culture. so regular monitoring is done using the same methods to check whether the water quality parameters are maintained in the optimum range or not. if not then to find out the fault in the system and to carryout the corrective measures to manage the same in desired range. The maintenance can be done by following the regular treatment practice without affecting the balance of the integrated system.

Maintenance means as per species requirement correcting water quality by application of required materials. Like for 6.5 water pH you have to add lime in water to raise pH up to desired level at 7.5.
