I am currently conducting research related to coconut water. Specifically on the effects of an invasive species (Aspidiotus rigidus Reyne) to coconut water glucose levels. It is composed of about 94% water, 5% sugar which includes glucose, fructose, and sucrose, and sorbitol contents, and the rest covers the percentage composition of proteins, lipids, various vitamins and minerals (Yong et al., 2009). It also contains many electrolytes which include sodium, potassium, and calcium. It is also basic with a pH of 10 in mature drupes. The acidity of coconuts were found to increase with maturity (Jackson et. al., 2004).
