I heated up to ensure the binding between the two layer and cooled after. At the end of the cooling phase on the whole, there was a delamination on both sides of my set.

It could have been an effect of generation of thermal stresses resulting from the difference of thermal expansion coefficients of both layers.
But in my case, i use a mutilayers structure. And i get delamination between two layers of cooper at the four corners.

It migth be caused either by impact during handling your product or poor bonding process. If it came from thermal stress, you can find delamination everywhere. If delaminations are found at specific position, you can narrow the underlying failure mechanism.
Other than heating/cooling, differences in CTE, thermal stresses, contamination (surface/interface) can be another reason of poor bonding/delamination. As pointed by some researchers in their comments earlier, more information may be helpful to suggest some solution.
If you provide information on material used ( fibre/ resin) and stacking sequence, geometry etc. it will be easy to sort out the reason.
Another problem may be that the fiber volume fraction is too high. This can cause problems if the composite is subjected to any type of fatigue.
What method have you used to infuse your resin? Lack of resin between the layers may cause this problem. you need to make sure that the distribution of resin is uniform during the fabrication phase.
Please describe your system in terms of stacking sequence, type of lamina, type of resin and fiber, describe also the manufacturing method.
In this delamination of layers means by which materials the layers are made and if for all layers you are using the same material or different materials. Ii is certainly depends upon the materials properties as previously mentioned coeffiecient of thermal expansion, rate of heating ,cooling and the time.
My structure is composed by 9 layers: ALN, cooper and Steel A42. The thicknesses of the layers was chosen to compensate the induced moment on the structure due to the difference in CTEMy method of bounding is to heat the structure to 900 C with a uniform pressure on the outside surface. The probleme is, after cooling under pressure, I had delamination on the four side of the copper layer which was removed from the other layer of copper (heat exchanger with fins).
