The book of Gonzalez, Woods is surely the most widely accepted. Another excellent book that contains more advanced material is the "Image Processing. The fundamentals" by Maria Petrou.

I prefer 2 books:

"Image Processing Principles and Applications" by Tinku Achary and Ajoy K.Ray

"Image Analysis and Mathematical Morphology" by J.Serra

I think Gonzalez is the best book to start with

Mr. Antonio, is computer graphics by James Foley is also an image processing textbook ?

Not exactly, but it has many elements of the theory of graphs ther are very useful
