I think that possibility of the practical building and the Neural networks learning with testing In Phyton etc. will be the best approach to the assessment of knowledge regarding the use of artificial intelligence in the health field among nursing students. But in my opinion, need to develop a special Neural network tool similar to LEGO constructor for building and learning Neural networks by children and students.
