ns-3 (Network Simulator 3) & Mininet is a widely used network emulator for creating SDN test environments as well as a used, open-source, and discrete-event network simulator that supports various network protocols and technologies, including SDN.

well, MEC do the practical, using simple laptop,Mobile, PC to test the scenario else for simulation use Qualnet software of scale-able network, or ns-3 (Network Simulator 2 or 3), EdgeCloudSim, PureEdgeSim, MobFogSim and IoTSimEdge.

Those tools are easy to learn and I get you quick results without much scripting
