What is the best in-vitro model for nitroso compound formation in stomach ? how to study if you developed formulation to inhibit the formation ?

Hi,

global research concluded that nitroso compound formation in the stomach is the reason for gastric cancer. We developed a formulation for treatment. We would like to conduct an in-vitro model study before doing an in-vivo mice model.

any suggestion, information, or lead will be appreciated
