There are several e-learning applications and it is is not an easy task to right off any because they all have there unique advantages and demerits in relation to the target audience, subject at hand and the learning content.

That been said, I will suggest you incorporate a safe exam browser (SEB) to prevent participants from cheating during online assessment. This will prevent them from checking other sites and applications during the period of assessment. Though, some might still check their hard-copy document but time constrain will reduce that to a great extent. I prefer Moodle, but will add that Google Meet or Hangouts Meet app (Android) helps a lot to teachers and students...

Without any doubt ,e.learning is the only facilitate way to keep contact with students ,so we must depend mainly on classroom as we started initially with them ,and it provides reliable platform for presenting ,testing and vital communication .But what mislead and disturb you are your followers with unclear names via email that may confused you to recognize your students ,and you must emphasize them to keep and respect any interference from whom they are not concern with your mission.

based on my experience with CANVAS i think it is the best application because it offer many tools for teacher and students

We use Canvas, MS Team and some lectures were via Skype.

The exams were individual for each student, some lecturers asked the students to show the table, walls, hands to make sure everything clear and not possibility for cheating.

For large groups of students, the exam was for 25 student, period of the exam 30-60 min, when it's done another 25 students takes the exam and so on.
