Though the conceptual meaning of the term depends on the discipline, the way I understand it is that, digitization is related and concerned with information. While computerization is related to processes. so we digitized information from analog to digital and computerized the process from manual to computer-based. On the other hand, Informatization has to do with society. We say informed society where information is flowed.
In my opinion, Digitization is the process of converting the print documents, photos, videos and other formats into digital format. Digitization helps sharing them via networks and also for preservation for future.

What i mean is that, the two terms share the same meaning in common, which application of technology or computer. If the subject is information it reffers as digitization and if its process reffer as computerization. It is also good to know the root of the terms shared one thing in common which number, as digitization is derived from digital which is a number reffering to the system that understands only two numbers. While computerizarion derived from compute which is counting numbers.
Digitization is the process of cording facts, observations etc. so that computer can understand and deal with it, while computerization is the process of authomating the process so that computer can execute it.
The different is as i said ealier: digitization used to be carried out on information while computerization used for automating or executing specific process.

In case of images, it may be JPG, BMP, PNG, etc while for video, it may be MPEG, etc., For audio files, it may be .WAV, etc. The format may be different depending upon the content viz., text, image, audio, video. But, if it is available in machine readable format i.e. digits, it is known as digitized or digitalized. This is my reply to your question. Hope I have cleared your doubt.

Content in VGA format is known to be analog, but due to simple devices, it is available in HDMI format known as digital.

In a nutshell, digitization refers to transformation of facts, observations etc. to a certain format so that computer can reconise and manupulate. And computerization reffers to automating process and prosedures so that computer can execute them. While informatization is the widespread of the transformed facts, etc among people in a society. Thats how i understand the three terms.
The answer is quite simple, however. It is all about the aim of a given digitalization process. Digitization may be called as building digital models. Model by definition means representing a real object from a certain (relevant) perspective while hiding real object properties that are irrelevant. So, for example, for ones, the digitization of handwriting content would mean to care only about the meaning of the text, while for the others would mean to preserve the shape of characters. For others, the chemical composition of the ink would matter, and yet for others the depth of the groove that the nib left behind.
But we are touching the topic of building models here (not only digital models) and your question was about digitization strictly.
Regarding the second consideration, the simplest answer will be - in general after digitization things are described by binary numbers ;) All other numbers and metrics are at the end represented most often by binary code.

unfortunately you misunderstood me, probably my explanation was not clear enough. I claim you mistakenly combine two different topics, which could mislead readers. Your primary question was about digitization, but after that you are raising the topics about selecting the set of properties of the original that should be digitized.
This is not the concern of digitization itself. Please notice that this set of properties could and even should be different depending on for what we want to used digitization process outcome.
And what you try to show as limitation is in fact great benefit. When we want to read book on book reader it is enough to encode all characters from the source text, that results in a lean file. But if we are graphologists and e.g. want to discover the author of the text, then the font shapes matter to us. Then the text must be digitized as an image so that it can be further analyzed. This is just a simple example, but it also extends to the tea brewing or teaching processes you cited.
As I mentioned earlier the aim is the key, not the subject being digitized itself.
In summary I would keep my first definition of digitization that I consider as concise and complete, and your side topics redirect to specific communities that specialize in brewing tea or transferring knowledge ;)
