AI as it currently stands can easily be used for law to increase productivity of existing lawyers, but I'm not convinced it would completely take their job (unless it was something simple/routine). Particularly it would be really good at finding the specific laws that are likely to relate to a given situation, or even find previous cases that are similar to your current one. It may also be good at generating templates for a lawyer to get a head start with. In all cases these would be tools.

However for arbitration (if I am understanding correctly as I'm not a lawyer) it would not be suitable as AI is not capable of real rational thought, nor moral judgment, although they can mimic it. Again it's best to use these things as tools rather than to give total dependance to it without guidence. Besides these language models also have political biases depending on how they are trained.

Regarding the legality of using AI, the issue lies on if you have permission to use whatever documents you need for text and data-mining, I'm not sure what the law says about that but there may be exceptions as there are with using data-mining techniques for research purposes.
