What is the instrument whether analytical, characterizing... of broadest applications (like measuring many substances) and a must in running a wide variety of projects ?
Obviously, this is a very broad question, and the answer strongly depends on the type of projects that you have in mind. From the perspective of analytical chemistry, I would go for an advanced LC-MS system. With such a device, a large variety of (non-volatile) organic compounds can be detected, even if they are present in (very) low concentrations.
If you are working on the quantification of metals, an ICP-MS can also be interesting but then you will only be able to analyze predominantly metallic species.
This question is a broad one. It would have been nice if you can specify what area or field the instrument is to be used. Anyways i can suggest Atomic Absorption Spectrophotometer (AAS) as ut can be used to quantify a variety of metals

It depends on your project but in my opinion, for structural, optical and morphological characterization of materials, following instruments are useful.
