You can build up to this data elicitation strategies by probing more through incorporating verbal reporting , thinking aloud (could be done via voice note), reflective journal writing, focus group interviews and all these could be supported further via document analysis as triangulations (if this is related to the phenomenon revolving around the respondents that you are investigating). You can google and survey for sample studies that use the qualitative strategies I listed above. Good luck.

As I know ethnographic study demand the researcher will stay with the respondents a good amount of time - to know the people in a social setting lead their lives, through long-time observation and discussion.

However, during this COVID situation, Zoom meetings, video conferencing could allow the researcher to follow their (people) lifestyle for a long time. Hope this will help you design the data collection method.

I have the same problem, I am based in Italy and carry out research on case studies in the UK. It is really hard because the only solution that I and my team can use is the interviews via Teams or Zoom. Unfortunately, I do not see any other solution for now.
