There is huge literature on the plantation and Caribbean society.  You could begin with George Beckford's book, Persistent Poverty.  You might also look at my paper, "Plantation Society and the Caribbean Present," originally published in the journal Plantation Society in the Americas.  It is here on Researchgate, as is my bibliography, "The Plantation in the New World."
