What are the major nutritional constituents of pearl millet (carbohydrates, protein, fat, fiber, iron, zinc, etc.), and how do these contribute to combating malnutrition in vulnerable populations?
Millet is a starch and contributes mainly carbohydrate and energy. On its own it cannot provide enough nutrients for a child or an adult. Millet as a porridge or drink would need to be consumed with other protein, fat and micronutrient foods such as meat, legumes, vegetables and fruits.
Pearl millet is a legume which contains carbohydrate with low glycemic index and high fiber content. Therefore good to use by patients with diabetes too. It contains proteins and micronutrients like iron , magnesium and phosphate. It's available in cheaper price, so it's a good food to use to avoid malnutrition. Need population acknowledgement about this.
