If you are using an observational approach, you will be gathering field notes and other documents. You can use a programme such as NVivo to enter all these data and then code them into themes,. sub-themes etc.
There are at least two forms of thematic analysis. The version from Guest et al. is essentially a codebook based, deductive approach. In contrast, the label of thematic analysis is most commonly associated with the work of Braun & Clarke (2006), which is more interpretive and inductive.
I would add Braun & Clarke (2006, 2013) to the list provided by Temitope Kinle Oyadeyi for Thematic Analysis. Specially the 2013 book is very helpful for beginners.
