One hypothesis that might need to be scientifically investigated is whether people who are struggling to adopt healthy eating habits have incomplete development of taste centers. Especially with regard to children and the difficulty of including food in their dietary repertoire, something similar to "dyslexia" may occur, that is, a difficulty in perceiving flavors that leads them to avoid vegetables and fruits. We from the field of psychology and anthropology investigate the social-environmental factor. However, I suspect that a serious investigation of the reasons for the preference of some foods over others is due to deeper causes.
