Each image has three values e.g. Y Cr and Cb means each image is a combination of these three value. Each of them is again 2 D array. Read the image one by one by any for loop and before processing do not exit from it.

If I understand you correctly, what you want is to have each image stored as a single index into an array. What I'm not sure of is how you want the data stored in the image.
One approach is to store it in something like a structure, which Uwe suggests.
A second approach is to store all three fields into a single numeric type. This is a common way to hold images in other languages; I wouldn't necessarily recommend it for Matlab, but it may answer your problem.
If we assume each field is an 8bit integer (which it seems to be in your code), you can store three fields in a 32bit integer (with 8 bits left over). You would use something like this:
I = uint32(R)*256*256 + uint32(G)*256 + uint32(B)
You can then store I in an array, perhaps as the nth plane of a 3D matrix. You can reverse the process as well of course. As I said, I wouldn't necessarily recommend it for Matlab, but I wasn't sure what you were after, and felt that this at least added something.
You can store the images in a cell array:
for i=1:25
A{i} = rgb2ycbcr(o{i,1});
end
This way you'll have A{1} = image1, A{2} = image2, etc.
If you want the channels separated, you can use a structure array:
for i=1:25
YCbCr = rgb2ycbcr(o{i,1});
A[i].Y = YCbCr(:,:,1);
A[i].Cb = YCbCr(:,:,2);
A[i].Cr = YCbCr(:,:,3);
