The "Research Interest Score" (https://help.researchgate.net/hc/en-us/articles/14293473316753-Research-Interest-Score) is an index used only by ResearchGate. It can easily be manipulated by a group of users, and it does not mean so much outside RG.
This score is like all the measure open to manipulations. It has some indication such how many friends you have but sometime have indication to the interest your work has. In the same way the citations also indication of who many friends/colleagues you have but sometime it also indication of interest in your work. As in academia there is strong need to be assumed famous and there is way to make it look like it. Some of these is genuine and sometime is not. There so many examples for this point.
So, for example, if a professor or evaluation committee wants to review my resume and application for a PhD position, might they also look at my Research Interest Score status?
Yes but again it is not a deterring factor. I would. but I would be more interested in the quality of your work. The whole process is subjective. I can tell you that there are many ``top'' researchers how somehow have created many connections and they promoting each others. It is build up process. In many cases they will look at everything and remember it is really objective process.
You have to think what would you do. I want to be "hired" (so to speak) and other want to be hired. I would to increase my reputation mostly and if in the process decrease my competitors. I my case I made a revolution in the marine or ship dynamics. I would like to exposed and my competitors would to minimize and ignore it. Actually this is true in my case. The same applied to your case. Hope that help.

As mentioned by Dr Genick Bar-Meir , the score is open to manipulations. Most academic promotion criteria do not include RG score. Academic achievement and research output are discussed further in most university websites and may include:
- publications such as books (monographs and edited volumes), articles, research reports and (in some disciplines) refereed conference proceedings;
- musical composition, works of art, screenplays, stage plays, other creative writing outputs;
- musical performances, stage productions, film, television, radio and related media productions;
- other forms of appropriate practice as research;
- developmental work in methodologies for technical and scientific disciplines;
- knowledge transfer activities, such as involvement in licensing of intellectual property or spin-outs.
