I’m thrilled to share our latest research on the antioxidant capacity, lipid oxidation, and quality traits of slow- and fast-growing meagre (Argyrosomus regius) fillets during cold storage. This work led by my Phd student I. Mittakos, highlight the critical role of intrinsic antioxidants in preserving lipid quality and shelf life, offering valuable insights for aquaculture and seafood industries.
