Protein play vital role in synthesis of various nanomaterials, synthesize nanomaterials having more stability and unique SPR peak as compare other methods. Cysteine amino acid may involve for bonding Ag-S, Au-S bond but at the same time which residues of protein or chemical ( AgNO3 / HAuCl4 ) play dominant role for nano-structure stability in reaction mixture.
Electrostatic (charge) or steric stabilization or a combination of both.

Is amino acids play role for stability of nanoparticles.
In case of Gold and Silver nanoparticles (NPs) metal-sulfur bond is the major reason for stability, as almost no other ligand can replace Sulfur from these two metals. And other reasons may be the electron rich environment of proteins, like they have number of -OH and -NH2 groups, abundanceof hydroxyl and amino groups is also one of the factors.Furthermore,as mentioned by @Alan Rawle, steric stabilization, the large hydrocarbons chains which reduces the claps of NPs and electrostatic stabilization. Yes, Amino acids are also good caping agents dure to presence of -SH , -OH, or -NH2 groups.
