I am determining a phenomenological model for the extraction process of oil from oilseeds.

It depends how bigg your seeds are.

if the seeds are in the range of µm, the best device would be SEM.

You could also use EBSD (Electron Backscatter diffration) for having direct information about the crystalline structure and crystallographic orientation of the grain.
