The sampling rate of a GNSS receiver is not 1Hz, it's several MHz !! The rate you are citing is the navigation update rate.

Did you have a look to uBlox products (https://www.u-blox.com/en) ? They design and sell COTS, but also dedicated boards such as this one for RTK : https://www.u-blox.com/en/product/c94-m8p.

Do you mean GNSS receivers with sampling rate higher than 1 sec? Most geodetic receivers available on the market are capable of collecting sampling rate higher than 1 sec.
