What I found with some women is they use increased weight gain to avoid unwanted physical advances and to feel more powerful if their environment is dominated by controlling people. There are a number of techniques like regression that can help the client understand the why of over eating.
There are many different techniques that can be used by a hypnotherapist. It might take some time to find what works for a specific individual.
I also understand that Self Hypnosis at a level of consciousness more superficial than medical hypnosis can work. When I was learning the Silva Method there were various anecdotal examples. I'm not sure if this has been tested in controlled circumstances or widespread retrospective studies done.
I always teach my clients how to do self-hypnosis. The depth they achieve depends on the client. There's a fair amount of research on hypnosis. Some people have more ability to enter a hypnotic state than others. The research is often done comparing highly hypnotizable clients with those who have not been hypnotized. There are tests a hypnotist can do before a session to determine some level of hypnotizability. I have had a few clients that I told hypnosis was not a good modality for them. They were wasting there time and money. I had one client on the opposite end of that spectrum. One hypnosis session helped him manage whatever was going on in his life - like stop smoking.

There are some issues with positive affirmations and positive self-talk in they can have the opposite effect in those with low self-esteem as what they are saying is entirely too incongruous with how they actually feel.
