Dear Kim,

This sounds more like a questionnaire question than an interview question. What kind of data are you trying to capture? If you are meeting your interviewees face to face, apart from asking your example question (which I would recommend asking as "to what degree was your creativity stimulated?") why not ask deeper questions, such as, "In what ways?", and "Why?". I presume it also depends upon how creative they view themselves to start with.

For questionnaires I like response scales which are only anchored at the ends like the example you have given. However, we recommend using a few less categories, such as 7, due to working memory limitations. Otherwise the respondents tend to simplify the complexity of the choice to left, middle and right.

If you conduct an exploratory study, then definitely you might want to choose the first option. This means that your study will be qualitative or have a strong qualitative component. This type of a study (i.e., exploratory study) usually provides new insights and may form a basis for future quantitative investigations. 

If the topic is well researched, for example, there are many existing questionnaires that you can consult for developing your own instrument, and if your research team does not aim to seek new or deeper insights, then you may want to consider the second option.
