I have several models, each one measures 6 values, under the same conditions. Now, I would like to rely on an optimization technique that can select the optimum model based on a set up thresholds for the 6 values. So, any recommendation of the best machine learning techniques or ANN using Matlab ??

There are several optimization techniques available for machine learning. such as, ACO,PSO,GA,BAT,CUCKOO etc. But now-a-days PSO will give better optimization over GA or ACO. But it is totally depends on the characteristics of your datasets.
I suggest you for better statistical analysis you should use 'R' for Machine learning. Install packages for which optimization algorithm you will use for your purpose.
