I am currently attempting to write my PhD thesis. I wish to arrange Chapters and their subheadings in such a way, that Chapter 1 headings, table and figures start with 1.1, 1.2... and Chapter 2 headings, table and figures start with 2.1, 2.2, 2.3.. and so on for subsequent chapters. I am using Office 2016.
Also I wish to know, any way where table of contents, list of figures and tables are automatically updated.
Kindly guide me how to do this formatting.

MS Word is no black magic but can be a pain in the rear end. My advice would be to prepare the format before you write all the content. Doing it afterwards drives you crazy and is no fun at all - been there, done that.
However, you can expect that you still need to fix some formatting issues in the end.
Adding a table of content and table of figures is trivial, ask Google and Youtube.
Also, chose a citation software with proper integration in Word, makes it so much easier if you do not have to worry about the list of references. I have been using Zotero for more than 10 years now and I am still happy with it.
Use the heading levels automatically prepared in the home tab to assist you in the headings and sub-headings. See the screenshot attached. Click on heading 1 for a chapter. Heading 2 for sub-headings, and Heading 3 for sub-sections

Adding a table of figures is a useful tool for allowing the reader to quickly navigate to specific parts of the document (or as a personal quick reference guide). This is especially true for longer documents with an excessive amount of media. It’s important to note, however, that adding a table of figures is only possible if you add captions (not to be confused with alternative text) to your figures, images, and tables. We’ll assume that you have already captioned the relevant material in your Word document in this example.
Once you’re ready to insert your table of figures, go ahead and click the location of the document in which you would like the table to be added. Next, head over to the “References” tab and select “Insert Table of Figures.”
Once selected, the “Table of Figures” window will appear, displaying the print and web preview of the table of figures. Here, you can also adjust several options and customize the format of the table.
Once you’ve tweaked your settings, click “OK.”

Microsoft Word is crap for writing scientifc documents. - LaTeX can handle just about any math: layers of subscripts and superscripts, and stacks of complex numerator/denominator pairs. However, writing in LaTeX would be more difficult if you are not already familiar with it. If you do choose to work in LaTeX, I second the recommendation of doing so in Overleaf. It has one working view that shows more of the code and another that looks closer to MS Word. You can preview the resulting page beside the working pane. Many familiar keyboard shortcuts work in Overleaf, and it has "buttons" for some common commands that would be faster than writing the code for the same effect.
- To enable a table of contents and lists of figures and tables in Word, start by using the heading styles and inserting caption numbers on tables and figures. The table of contents and lists of figures and tables will be drawn from those hyperlinked headings and captions.
