Hi, I wanted to know what happens to water molecules and their shells/ orbitals when subjected to boiling and how is this different from when in microwaves? I understand that supplying heat to the molecules agitates them and this causes electrons to excite and jump to higher energy levels. But How does this differ from different sources. And what happens during convection microwaves?
Any help is appreciated. If there are research papers I can read through, please mention.

The temperature reached is identical for different heating devices as physics indicates the boiling point of water and it can not exceed that as long as its liquid. There is no difference .Whether boil water in a kettle or in microwave, it reaches a temperature of 100 degree C /212 degree F.
Electrons do not jump to higher energy levels. The dipole molecules of water turn to the oscillating electromagnetic field (if the frequency is OK).
