I have data with the starch percentage for corn hybrid. I calculate the mean, standard deviation and Pearson coefficient of variation
1) If Pearson coefficient of variation is greater than 30% can I say there are significant differences between these percentages?
2) there are no significant differences between percentages if Pearson coefficient of variation is smaller than 10%?
How safe is this interpretation?
Interesting project but I don't do statistical analysis. The closest I come is to use the R2 calculations.

See: assumption of normality for all the different kinds of tests you can use. However, Assumption of normality means that you should certify your data roughly fits a bell curve shape before running certain statistical tests or regression. The tests that require normally distributed data include:
a- Independent Samples t-test.
b- Hierarchical Linear Modeling.
c- ANCOVA.
d- Goodness of Fit Test.
You can also able to use a chi square test for normality. The benefit is that it’s relatively easy to use, but it isn’t a very strong test. If you have a small sample (under 20), it may be the only test you can use. For larger samples, you’re much better off choosing another option.
As deep as I know there is only one application for the coefficient of variation - to determine the normality of distrubution - if the coefficient is less than 30% probably you can use parametric tests, if not - you have to use non-parametric tests. There is no any chance to determine any "significances". Moreover, think if you are right than use arithmetical mean and SD between percentages.

@Mikhail Kuznin. Thank you for the link. When I see what is on that page, I realized I can use the Spearman rank correlation to analyze the difference between percentages of starch for affected corn kernel and the percentages for non affected corn kernel for different corn hybrid.

the data I refer are not based o n numbers of pairs. In fact I measure the content of starch for some kernel of a corn hybrid. So a have only a string of pecentages. the problem that I was interested is if I could use the Pearson coeficient of variation (standard deviation/mean) for some data analysis.
