In the attached link you will find liver segmentation datasets.
This was part of a MICCAI challenge in 2007:SLIVER. In addition, if you develop a segmentation method for the liver in this case, you will be able to compare with other proposed approaches.
For lung images my colleagues Dr. S. Jaeger and Dr. S. Candemir they do plan to release some 2 different data collections, but I think if you contact them, you might get it right away.
I think you can try to have a look to the LIDC-IDRI lung CT dataset. The dataset doesn't provide reference segmentations images, however I think you may want have a look at it. Here https://wiki.cancerimagingarchive.net/display/Public/LIDC-IDRI you can find more information.
There is a data set, actually two available with Sameer Antani at National Library of Medicine, NIH. But we were interested in TB detection in chest x-ray images.
