electrokinetic potential will certainly not very helpful for dispersibility of carbon in various organic solvents.

You can characterize e.g. by particle size distribution or sedimentation behaviour. The latter can be even be used to determine Hansen Dispersibility Parameter, which let you predict behaviour in solvents not tested yet.
