The University of Iowa has a normative data set for spectral domain images of 30 patients with glaucoma. You can get more information and request the download here: http://www.medicine.uiowa.edu/eye/Datasets/
Every OCT machine has an incorporated normal data base. Each has its own specifications regarding age, race, etc. You would have to get in touch with the makers of the particular machine you're using to get this characteristics.
It is always best to come up with a normative database for a particular population (as structural parameters have been reported to vary with age, race, ethnicity etc). We studied the normal distribution of OCT parameters in our population and used it subsequently for glaucoma diagnosis!!!
