If you want old style theory you might want to look at the first book about neural networks, it was called “Introduction to electronic brains” or something like that, around 1960 I believe (someone might correct me on that). However, if you will google for what you need (control, regression, classification, ...) you will for sure find good books and all of them will have theory included.
