Whislt we know that off-flavor compounds such as geosmin/MIB deposit in fish fillets, and potentially more in fat-rich areas, is there a pattern of deposition in terms of localisation?
For instance, do this off-flavor compound deposit near the gills first and progressively towards the tail or vice versa? Preferencially in certain muscles?
If you have some references, that'd be great too!
