The gain of a non inverting amplifier is easy to deduct from the voltage divider Vin =  V0/(R1+R2) x R1; Vo/Vin = (R1+R2) / R1 = R2/R1 +1. Were R1 is the resistor from input to ground and R2 from output to input.

So, if you want a gain of excactly 10, R2 / R1 = 9. For example, R2 = 9,09K and R1 = 1K in series with 10 ohm. For a gain of 100 R2/R1 = 99, for example R2 = 100K and R1 = 1K in series with 10 ohm. 

If you're planning to use two (2) additional amplifier stages you could as well use inverting amplifiers: twice inverting is the same as not inverting at all :)

Well you could select resistor ratio (feedback to R1) in a way to have a gain of 10 as Francesc suggested. In non inverting configuration Rf/R = (A-1) where A is the required gain. If the gain is 100, Rf/R should need a ratio of 99. 100k/1k will give you a pretty good combination. However the scale of the resistor unit (whether it's to be in kilo or mega) is also important since individual Rf or R1 can affect the impedance to the op-amp input.

Check out the OP27 data sheet fig 43. Use this diff amp  in non-inverting mode with a gain of 500  (500K/1K) followed by a gain of 20 ( 20K/1K) twin is op270, quad is op470, low noise on most OP devices. You could use two non inverting stages , if you need high input impedance consider the old bifet TL064 & TL074. Having four op-amps in a pack means you can impedance buffer the input and the output too. Hope this helps

Besides all suggestions gave above you must use a low noise amplifier, it depends of the availability in your place, LF412 is a good choice, buffering in and out and splitting amplification in two inverting stages is the best design.
