Is it mandatory to use an insulator as a treatment zone in PEF pasteurization?

In PEF pasteurization; It's usually recommended to remove any direct contact between the electrodes and the liquid food with the help of a treatment zone. Treatment zone is recommended to prevent the dissolution of the particles due to electro-chemical reactions due to electrolysis. However, insertion of any insulating material reduces the intensity of electric field inside the treatment region. How can we overcome aforementioned issues?
