In the the book "Radar systems analysis and design using matlab" and in the book "Introduction to radar systems" it is mentioned that the peak value of the ambiguity function is (2E)^2, where E is the energy of the signal.
I could understand why it is (2E)^2 and not (E)^2! since the peak is equal to the square of the maximum value of autocorrelation function which is E.

Based on my understanding, it should be E^2 not 4E^2.

Both answers are incorect. If you assume that E is the energy (Joules), E2 or (2E)2 are meaningless. The ambiguity function is the cross correlation between the emitted signal and its normalized replica (unitless) for all possible Doppler-distance positions. Assuming this defintion, the square of the peak magnitude is the signal energy.

So it is E^2 and not (2E)^2. In the "fundamental of radar signal processing" it is E^2.
If E2 is the energy, then E is the amplitude of the peak value of A.F.
the opposite I think is correct: if E is the energy then the peak of AF is E^2.
No, the peak value of AF is amplitude voltage (V). The energy is E=V². I think that, in your book, E does not mean "Energy" but voltage.
In some bibliographies, E is defined as the peak-to-peak value and that is the double of the maximal value
