Ipeirotis published "Demographics of mechanical turk " in 2010.
I think some of the data from there was quoted in Paolacci et al's "Running experiments on amazon mechanical turk. Judgment and Decision making"(2010)
The demographics of MechTurk is important for any researcher. Does anybody know of any more recent research on this topic?

Paolacci and Ipeirotis papers are a good starting point you identified.
Furthermore i suggest reading the following paper:
Berinsky et al. 2012 discuss in their paper MTurk demographics for the use in experimental research:

Chandler et al. 2014 found that the MTurk sample might be used to tasks from researchers. Many workers take part in several related studies and are thereby already biased.

A good starting point is always Mason and Suri 2012. In their guideline for behavioral research on MTurk, they discuss the demographics in the "workers" section.
