The appropriate assessment method depends on the ultimate goal or objective of the cirriculum.
- In case of knows/knows how, the online examination could be used. MCQs and short answer are quite effective, but risk of cheating should be concerned. Short essay, reflective writing, and blog are excellent tool for this level of knowledge.
- For shows how/ does, the role-playing, demonstration, story telling, and portfolio which includes videotaping could be effective.
Fortunately schools have opened again here in Scotland, but for a while we also had just online learning. I think that it would be useful for student teachers to deliver online learning and/or make video resources, and a lot can be gained from evaluating such work. But it's never going to be the same thing as being in a classroom.
Agree with @john william firth. It seems that online learning is here to stay and undoubtedly will be a fall back to, should we encounter another situation as current. New teachers would benefit from honing online teaching skills as well as traditional teaching skills. But before new teachers are assessed on online teaching skills, there should be agreement on what new teachers will be assessed on for an online teaching component. Wouldn't be fair to asses someone when they do not even have an idea on what they are being assessed for.
The convergence of offline and online learning has already begun. I think that online will not disappear anymore. Assessment is a big problem for me. Every second work is written off from another. Tests also have very high scores.
I've been doing both online and at school evaluation and obviously the strategies are different... I believe onlive evalution should focus more on research, projects or "flipped classroom" strategies and less on traditional tests.
Remote teaching assessment is complex. One can use polls and other mechanisms offered by Zoom to ascertain the effectiveness of teaching, as well as how prompts for discussions and written assignments are fashioned to open rather than foreclose engagement. Still, to some extent, remote teaching may result in evaluation based on how entertaining course material and the person delivering it come across through the various screens utilized by students.
Assessment should also be done online using diffetent tools. Of course there is no guarantee that students might not cheat but to protect these students and the society we should not ask them to come back to schools to be assessed. One possible way to assess students is participation in discussions teachers should monotor students and encourage them to participate effectively in their virtual classrooms. Another way is the written assignments. However, for summative assessment can be done online too after ensuring that the students aren't cheating. This would require certain procedures they have to follow during their exams.
Do they have any online teaching platform? If they do, you can ask to be included in the list to access what they are doing and observe them that way. You need to find innovative ways to assess, just like they are using new systems to keep students busy.
In my case, student teachers has to prepare mock teaching at home and assessment only focus on certain aspects of teaching skills.. excluding the present of students.
Assessments are prepared on Google Form but I have found that there are discrepancies in the students' answers. Teachers know who are the good students and who are not. When all assessments come up with A's, you'll know that someone is helping them with the answers. Though assessments are not tests, teachers need to know where the students' weaknesses are in order for us to remedial the problem. The online assessment is challenging. Unless all students are able to have online video conferencing, there is no way to get accurate assessment results.
I feel it depends on the assessment criteria used to assess. If it is developing an evidential portfolio there is much that can are completed away from the classroom. For example the Teachers' Standards : https://assets.publishing.service.gov.uk/government/uploads/system/uploads/attachment_data/file/665522/Teachers_standard_information.pdf
identify skills English Initial Teacher Education (ITE) Students need to work towards - providing tasks which support these can happen outside of the class. Obviously confidence and competence in a class is important-, but reflective and planning tasks can help ITE students develop their skills, ready for when they can get into the classroom. They can also develop their online teaching skills to teach learners remotely.
So I feel time not in class is not wasted if a learning package is provided for ITE students to use and also for ITE students to proactively seek opportunities to develop their skills.

It should be investigated whether the school and the students have access to online platforms. If the school does, they could set up a session for the student to teach via the online platform and the lecturer could have access to the session to evaluate the student.
This is truly a challenge for professors to assess the teaching skills of the students. However, this also has a high impact on students given that they can't fully apply the theories they've learned. In this connection, professors should always look new ways for assessment. You can ask them for a mock teaching or ask them to have one student and do the usual method of teaching but this should be taken with safety measures because of the threat of COVID 19 pandemic. And, send a spontaneous recorded video. However, these seem to be a challenge that is why both should have an open communication and feedback so what ever struggles they experience will be discussed and resolved.
