Simply code them as you had planned, but create another variable for those that fit into more than one code. If it is quite rare, then describe these cases separately. If it's common, then you may want to reconsider your theory or build the paper around this finding. Basically, you're either doing a deviant case analysis or you're going to switch up the theory and direction of the paper.
Yes, of course you can. People frequently run more than one idea together in a spoken sentence, much less in a written paragraph. So long as your Methods section write-up describes the coding process (the unit size (sentence, sentence fragment, etc.), as well as the identification and coding of unique ideas within the text), this is perfectly acceptable.
