We are trying to locate a theoretical framework that can explain the impact of teacher's use of innovative technology and/or classroom manners. I will appreciate your guidance/help in finding a specific theoretical framework (as opposed to a broader theoretical perspective such symbolic interactionism etc.) .
There are a large number of theoretical frameworks from which to approach this object of study. Here are some of the ones I think might fit in better.
First of all, as you say, symbolic interactionism could fit very well into your analysis since the impact of the teacher is not exempt from the interactive dimension. In this line you can also connect the dialogical approach or with the theory of the communication of habermas. In these two cases the impact is measured through the effectiveness of communication.
The famous approach of constructionism can help you in the analysis of social structures and agents regarding the action of learning (this theory is an update of Vigotsky and Bruner). Other more conventional ones could be the focus of the critical theory that would analyze the role of the professor within the socio-political context, the grounded theory based on the induction of learning itself, the systemic theory based on the interdependence of the elements that compose innovation or the most radical, the theory of Latour's network actor based on the analysis of networks when it comes to producing knowledge within the focus of the sociology of innovation.
As you can see there is a wide range of theoretical approaches, I recommend that you get to know each one of them and then select the one you consider most suitable.
Beyond any theories, there is a very simple and practical way of motivating students and increasing their performance: by considering them actors in the process of teaching and learning. When students feel that their views and imagination is involved in the process they will try to perform much better. This one of the explanations why introducing study cases in teaching university students proved to be more attractive than just teaching them in a classical way. Also, it is important to switch from knowledge transfer to developing generic thinking skills.
