You should perform different analyses; i.e. you can submit your extract to column chromatography to obtain simpler fractions and perform HPLC and/or LC-MS analyses on them

I use methanol and now they dissolve completely? Is that ok to use Methanol?

If the fractions do not dissolve in hexane and ethyl acetate, try other solvents like acetonitrile, acetone, etc...tili DMSO and so on.

As I previously said, I do not recommend to inject polar extract directly in the GC-MS system. They likely contain also non-volatile compounds that may damage the column and/or dirty the source

Maybe methanol isn´t a recommended solvent for GC-MS but I standardly use it as well.

In case of extracted plant material it shouldn´t even cause degredation of the column, ion source and mass analyzer. So don´t be afraid using a polar solvent.

Of course you can also think about derivatisation, but I don´t think that it will be necessary.

I fully agree with Guido Flamini. You should try with LC-MS only and not to go for  GC-MS..
