I can recommend this book: Foams: Theory, Measurements, Applications (Surfactant Sci. Ser., Vol. 57)/Ed. by R.K. Prud'homme, S.A. Khan, New York: Marcel Dekker, 1996.
Apart from above mentioned books. If you don't want to go in depth, you can directly goto websites of foam venders. They provide these properties there. you can also get stress strain curves by writing emails to the contact mentioned in websites.
These values are tested values( standerds followed are usually mentioned), you can trust them.
Of course, all vendors of surfactants offer required info on their products. But, if you like to consider the structure/relation properties in surfactants more deeply (foaming too), there are about 100 volumes of the Surfactant Science Series and other sources as well ;-)
