How to select the window size and increment while doing processing of EEG data?

Currently, I am working on processing of my EEG data. In the data each epoch/trial length is 7sec and the first 2 seconds data is rest data and at the 2nd second we will show the stimuli to the subject to perform.

So, which values should I consider for window size and window increment?

Is there any reason behind choosing the values for window length and increment?
