One option to characterize at least the texture of the cement based formulation would be to use a rheometer setup with a vane geometry and to look for yield stress phenomena based on an increase of the shear strain. At low shear strain the results in the detected deformation should be low, when the yield stress is obtained and even higher strain rates are applied the deformation should increase rapidly. Concrete performance using different admixtures can be quantified by conducting slump , air set and viscometer tests provided all other conditions like proportion of ingredients of mix and mixing procedure are same for different admixtures.
Compressive strength of concrete at 28 days curing period is also most important factor.
