How to optimize the use of PRBs to transmit data with different sizes and different QoS parameters in 5G? Since we have different numerologies in 5G which offers bandwidths and different durations of PRBs?

As you mentioned, and already known in literature, 5G aims to support mMTC, eMBB, and URLLC use cases. However, each use case has its own quality of service constraints. The mMTC traffic is sporadic, data size is very small, high energy efficiency is required, and no strict latency or reliability constraints. eMBB, same as conventional human-type communications, requires superior performance in terms of lower latency and higher throughput than mMTC. Finally, URLLC demands extremely low radio interface latency, down to about 1 ms, or high reliability up to about 99.9999%, at a variety of data rates.
Now regarding your question about the optimum use of PRBs, it is more of a resource pool partitioning case, as suggested in some of the existing literature e.g., Fig. 30 in the following paper

So, the resource grid, or PRBs pool, is divided into different partitions or multiple access blocks (MABs), where the PRBs in a particular partition/MAB correspond to a specific set of transmission parameters such as transmission block sizes, modulation and coding schemes, and transmission modes in order to achieve the variety of service requirements. The configurations of the MABs in a cell can be broadcasted by the base station. During data transmission phase, each active user first selects one MAB based on its quality of service requirement, and then transmits its signal with the set of parameters associated with that MAB. At the receiver, data detection can be independently performed on each MAB as the base station already knows the transmission parameters associated with each MAB.
Moreover, managing these MABs or resource pool partitions is an optimization problem, where the concepts of dynamic network slicing can be used. The base station, based on the varying traffic demands, can dynamically change the number of PRBs in each partition for better performance e.g., see Fig. 21 in the paper
