Need help!
I need to measure the packet loss, jitter and delay in streaming , audio and file transfer in a real network in diferente places (Km away)
What is the best software to do this measurement ?
Wireshark gives to measure it ?? Some guy's told me that wireshark do this, but I'm not sure if it's better or do exactly what I want.
I need in order to have a graphic which can analyze the data ..
help me!

With wireshark you will require local access to the network interfaces in which you would like to sniff and record packet captures; which can be used to build information regarding the above.
Now, firstly, do you have access to this networks? If so, great. You can use Netflow for this information - although this will require configuration to be added to the network devices in which you want to collect the information.

In the above all the configurations are listed on the website. However, as stated the devices will need 15.1 if they are indeed Cisco devices.
The other options you have to aggregate IP SLA data, which can be used to mimic different types of traffic; such as VOIP, HTTP ...etc. the IP SLA data, if sent to a database can then be aggregated to determine packet loss, jitter, delay ...etc.

There are a couple of clarifications that are needed in order to answer your question.
1. As Ryan was asking, do you have access to this network?
- If you have, please look at the other two questions.
2. Are you allowed to do passive measurements ? In other words are you allowed to use something like Wireshark ? (many of the enterprise or ISP networks consider passive monitoring a type of attack)
- If you are, you might want to take a look at: MRTG ( http://oss.oetiker.ch/mrtg/ ) or cacTi ( http://www.cacti.net/ )
3. Are you allowed to do active measurements ? In other words, insert traffic in these networks ? ( *Note: Active measurements are typically used in isolated network environments)
- If you are, you can use tools like: iperf ( https://iperf.fr/ ) or D-ITG ( http://traffic.comics.unina.it/software/ITG/ )

I intend to perform the tests are between two networks of two Portuguese universities that have access to the public IP of each.
In terms of access I think I have access.
Yes I am authorized to use wireshark , I think this will not be the problem.
Tools, like D- ITG and Iperf only inject packets on the network , how do I test a streaming or voice call ??
My Teacher told me that Wireshark is a good tool, but I think that isn't good to do this tests..
Let me clarify, wireshark is a packet capturing tool.
To test a voice/video/interactive data stream that is sensitive to delay, jitter ...etc. you will need something like a traffic generator, here are some open source options:

If you want to test LIVE traffic, e.g., a streaming data feed or voice call in action on siad network, as I previously suggested Netflow is your friend here.
Without Netflow, Wireshark is still a viable option and here is the config for remotely capturing data on a network interface:

But remember with wireshark to aggregate data for delay, jitter, loss ...etc you will need to aggregate the packetcapture against some filters and parse the traffic flow in a tool that can generate a graph for you.

Netflow is Cisco proprietory. Although, there may have been moves towards open source implementations. If your devices are not cisco then you have an issue, and if they are they need to be 15.1 IOS version minimum.
