Every time I try to add the hmf to deionized water, it turns into small chunks which can hardly resolve and I have to spend a lot of time stirring it, which still leaves small parts of hmf floating in water. Same has happened with using methanol as a solvent.
Is there a special way and technique to use for this matter?
Dear Sir. Concerning your issue about the preparation of HMF standard solution. Prepare a stock solution of 2 mg/mL HMF by dissolving 10 mg in 5 mL DI water in a plastic volumetric flask. Store aliquots of stock solutions in plastic containers at 4 °C. Stock standards are stable for at least one month. For more details, I think the following below link may help you in your analysis:

unfortunately nothing really worked as well, I tried ethanol but had no difference from deionized water, but what I did was to add the HMF to deionized water and used a magnetic stirrer to stir it for a few hours. The longer you leave it the better.

I melted the HMF at 36°C because it was solid. I had a yellow liquid that I disolved in deionized water at 2mg/mL and it worked really well.
I don't know if you tried to melt before disolving ?
I had tried to heat up the solution without any luck but had never melted the HMF itself just because I had only a small amount of it and was under the impression that it oxidizes very fast when exposed to air.

I am working on determination of HMF content in honey by HPLC.
I have prepared stock standard solution by dissolving 10mg of HMF in 100 ml D.W (100ppm) and it's completely soluble in D.W.
My query is, for how long HMF stock standard solution is stable?
Do we have to prepare it fresh everyday?

As Isam Eldin mentioned, the standards are good for at least a month if you store them at 4 °C. Since you are also using the HPLC, you can simply run the same sample and compare the area under the curve for HMF every time you run the standard.
