That's depend on what kind of parameter and instrument you want to use to quantify the gait characteristic. According to my experience, with data from wearable sensor like accelerometer or IMU you can quantify gait stability by extracting some frequency-domain features of the sensors data. However, I guess just by using gait spatiotemporal parameter you also can differentiate between elderly and others gait pattern.

Yes, and if i am correct with what exactly you want, if you want to differentiate gait pattern from elderly population then you need another group for comparison so that you can run statistical analysis between those two groups from the any parameters you have calculated.
